MINT . Hotel Intercontinental
Revamp of an existing bistro to keep in line with the hotel major upgrade. Paring Onions’ founder Alex Wong worked together with Michellin Star Chef James Viles, in redesigning the hotel’s main fine dining restaurant MINT. Consist of a open dining room, private room & lounge. The space is situated inside the former treasury of New South Wales, listed as a heritage building of high significance. The design must comply within strict constraints posed by council / heritage authorities, yet not compromised of the restaurant’s modern nature. The result is a modern contemporary casual yet sophisticated venue for drinks dining and mingle.
